Goin’ Green

I love St. Patrick’s Day. When I was young, my mom would take me out of school on St Patrick’s Day so I could go to her preschool and pretend to be a leprechaun. Just the regular leprechaun stuff, ya know, like leaving gold coins in the yard, messing up the toys in the preschool room, writing messages on the chalkboard (in green of course) and stealing the kids’ pictures they’d colored of a leprechaun and attaching a treat to it. I stayed hidden the whole time so it was pretty convincing. Probably more exciting for them than Christmas. Trying to catch a “real” leprechaun is awesome. I loved wearing green to school with my giant “Kiss me I’m Irish” button (don’t know what ever happened to that…).

Well, I still love St Paddy’s day. I was so excited the night before that I got up and laid some outfits out for Doug. I didn’t want him to get pinched at work. He’s a good sport.

The last few years I’ve made corned beef and cabbage. I was getting ready to buy this year’s corned beef when I finally came to terms with the fact that I actually don’t really like corned beef. I decided to just go with a regular roast beef. I do love cabbage though. A lot. In fact, China makes the best cabbage ever. I would order it all the time. Doug grew tired of it, so sometimes I’d walk down to a restaurant by myself and order cabbage. I’m sure they thought I was so weird. It came in a large serving bowl (remember everything is family style there) but I could finish the whole bowl of cabbage. By myself. Yum. It’s just not as good here. Anyway, the menu for dinner was: Roast beef, cabbage, potatoes and carrots; tossed green salad with cucumbers, avocados and green ranch (which Doug thought was gross even though green dye has no effect on flavor); green beans; lime jello with green whipped cream; kiwis; homemade green Irish soda bread; Sprite with limes and ice cubes that I dyed green and flavored with lime juice; and for dessert- mint chocolate chip ice cream. I am a huge, huge nerd. I decorated the apartment with tacky St. Paddy’s day decor.  We had Aubrey, Skyler and little Remmi over for dinner…and they forgot to wear green! Good thing I bought giant green buttons for everyone to wear. Disaster averted.

Only 364 more days until the next St. Patrick’s day! I probably need to get some more green dye before then.

    That’s a pretty good looking dinner. Wow! I didn’t know how much you loved St. Patrick’s Day. Oh the memories of the “Leprachauns” coming to preschool for so many years. Goodness knows those kids tried to find who had messed up their books, pictures, and left them the gold wrapped candy, etc. They searched outside with their green “leprachaun” binoculars, but the sneaky culprits were never discovered. I think you helped me with that for over 10 years in a row! I don’t know who had more fun with it – us or the preschool kids! Hilarious good times!!

    How come I didn’t know this about you? I feel like I don’t know you at all anymore. Did you know of my complete disdain for St Patrick’s Day? I HATE it. It puts me in a bad mood just thinking about it. We will have to agree to disagree I guess.
